Put it in the skillet, mix it up, cook it, serve it, and eat it! Oh yum!
Ingredients:
- 1/4 cup butter
- 5 medium potatoes, peeled, cooked, chopped, and cooled
- 1 large yellow onion, diced
- 6 slices bacon, cut into 1-1/2 inch slices, cooked, and drained
- 1/2 teaspoon sea salt, or to taste
- 1/2 teaspoon fresh ground black pepper, or to taste
- 8 – 9 large eggs
- 2 – 3 tablespoons whipping cream
- 3/4 cup grated sharp cheddar cheese
- 1/4 cup chopped green onions
Directions:
Melt butter in a 10 or 12-inch iron skillet over medium heat; add potatoes and cook tossing gently until well golden brown and semi-crispy.
Add onions to the skillet; cook 2 – 3 minutes (adding more butter if needed); add the bacon; give it a good stir and remove from heat while you get the eggs ready.
In a bowl, whisk the eggs with whipping cream; season with salt and black pepper; pour the egg mixture on top of potato mixture, tipping the skillet so egg is distributed to the edges.
Return to heat; stir gently until the eggs are set. Sprinkle with the cheese; cover and allow the cheese to melt.
Add chopped green onions. Serve at once.
NOTE: Add sliced jalapeños, mushrooms, or green pepper if you like. You can make it your own to suit your taste.
