  • 1 cup of warm water (not boiling, see notes)
  • 2 cups of almond flour

  2. Gradually add olive oil and warm water, stirring until the mixture is well incorporated. Let it rest for a minute.
  3. Knead the dough a few times and shape it into a ball. Place it on a lightly floured surface.
  4. Divide the dough into 4 large or 8 small portions. Place one portion between two sheets of parchment paper and roll it out thin and flat with a rolling pin. Use a dinner plate to cut out a tortilla shape.
  5. Heat a non-stick skillet over medium heat and lightly grease it. Cook each tortilla for 2-3 minutes on one side, then flip and cook for another 2 minutes. Repeat with the remaining dough portions.
