Mexican Cauliflower Rice

Nobody likes prepping cauliflower rice.  I don’t care who you are.  It takes forever to grate, then you have to warm it in the microwave and squeeze out the excess moisture.  More importantly, it makes a mess of your kitchen.  I will always buy prepped cauliflower rice.  Trader Joes has my favorite in the frozen section.  All you have to do if warm it up over the stove and you’re done.  I have been experimenting with different recipes and fell in love with the taste of my Mexican Cauliflower Rice.  It tastes like the classic flavors you know and love with a fraction of the calories.  It’s the perfect side-kick to taco Tuesday!

Let’s get cookin!

Prepare the cauliflower rice following package instructions. Heat the olive oil in a large skillet over high heat and add in the onion saute for 3-5 minutes or until softened.  Add in the garlic and saute for an additional minute making sure the garlic doesn’t burn. Stir in the tomato paste and season with red pepper flakes, salt and pepper.  Add in the cauliflower rice and mix well. Add salt to taste.  Cook until heated through. Remove the pan from the heat and stir in cilantro.

Mexican Cauliflower Rice

Cauliflower rice is all the rage…and I agree with it.  This Mexican Cauliflower Rice tastes traditional but with a fraction of the calories!

Ingredients
  

  • 1 package of frozen 12 oz or fresh cauliflower rice
  • 1 Tbsp olive oil
  • 1/2 red onion chopped
  • 2 cloves of garlic minced
  • 2 Tbsp tomato paste
  • 1 tsp of red pepper flakes omit if you don't like spice
  • Salt and Pepper to taste
  • 1/2 cup chopped cilantro

Instructions

Notes

NOTES
Cauliflower rice needs a lot of salt. Make sure you taste your food while you are cooking!
