This summer time salad is delicious, healthy and easy to make. With just a few ingredients from your pantry you can have this on the table in 10 minutes. If you make it the day before or early in the day, everything blends together nicely. This recipe just keeps getting better everyday.

I usually keep this in a 1/2 gallon jar in the refrigerator. I wanted all of you to have a really good picture of just how wonderful this cucumber salad looks (taste even better).

Many people make a version with mayo. Which taste great, but has much more fat content and calories. Give this a try. Let me know how you enjoy it.

Ingredients for Refrigerator Cucumber and Onion Salad

  • 4 cucumbers, thinly sliced
  • 1 red onion, sliced
  • 1 bell pepper
  • 1 Tablespoon salt
  • 2 cups white vinegar
  • 1 1/2 cups sugar
  • 1 teaspoon celery flakes
  • 1 teaspoon red pepper flakes

Directions for Refrigerator Cucumber and Onion Salad

  1. Mix cucumbers, onion, pepper, and salt in a large bowl.
  2. In a saucepan, combine vinegar, sugar, celery flakes, and red pepper flakes, and bring to a boil.
  3. Remove the saucepan from heat and add 2 handfuls of ice.
  4. After the ice melts, pour the mixture over the cucumbers.
  5. Store the salad in the refrigerator. The salad makes 2 quarts or fits into a 1/2 gallon jar.

Note: If you don’t have as many people to feed, you can halve this recipe. Remember, it will keep for 2 months in the refrigerator. This is a great recipe to prepare for all those summertime family gatherings or potlucks you will be attending. Enjoy!
