It has been a couple of weeks since I have posted a new recipe. Honestly, we have been living it up! We are enjoying a very busy fun-filled Summer. In the last couple of weeks, we have had lots of company, Kitten turned 5, the kids took their first solo trip to the grandparents, and the hubs and I finally celebrated our anniversary with laziness. With all of that fun disruption, I have spent a lot less time in the kitchen. I am easing back in with some quick, cheap and easy meals.

I am building a nice collection of skillet meal recipes on the blog. I LOVE skillet meals. My kids LOVE skillet meals. And, my husband LOVES this Southwest Spaghetti Skillet meal the most; because, it reminds him of a church potluck meal.

My skillet meals take about 35 minutes from start to finish, and best of all are quick to clean up! Quick food and easy clean up are a must on busy days. We are involved in baseball, fencing and gymnastics this Summer. We have more activities this Summer than we do during the school year. And it is so tempting to just eat out or pick something up! And that is okay some of the time. It is a killer on the budget and honestly we eat a lot more fried food! This Southwest Spaghetti Skillet is a $10 meal with lots of yummy flavors.

Southern Spaghetti Skillet

Ingredients
  

  • 1 to 1/2 lb Ground Meat
  • 1 can Diced Tomatoes drained
  • 4 oz Green Chilis mild
  • 1 can Black Beans
  • 8 oz Cream Cheese cubed(we use dairy free)
  • 2 tbl Taco Seasoning (we make our own)
  • 2 cups Chicken Broth
  • 8 oz Spaghetti uncooked

Instructions
 

  • Brown ground meat over medium.
  • Once cooked completely through drain and return to skillet.
  • Add Tomatoes, Green Chilis, Black Beans, and Cream Cheese.
  • Stir in Cream Cheese for approximately two minutes.
  • Add Taco Seasoning and stir.
  • Add Chicken Broth and Spaghetti and cover for 15 minutes stirring occasionally.
  • You must stir about every 4 minutes to keep spaghetti from sticking together.
  • Take skillet off heat and let cool for 5 minutes.
