Ham and Broccoli Twice Baked Potatoes

My favorite recipe was the Ham and Broccoli Twice Baked Potatoes served with Texas Toast and Cantaloupe. Lilly enjoyed this recipe very much. She loves her some baked taters!! It’s recipes like this that keep us from eating fast food. We were able to enjoy a home cooked meal, that was OH so easy, plus the fresh cantaloupe was amazing. Anytime I get fruits and veggies into my family, it’s a success.

Ham and Broccoli Twice Baked Potatoes

Ingredients
  

  • 4 medium baking potatoes
  • 1 cup fresh broccoli florets
  • 1 9-oz tub ham, diced
  • ½ cup shredded Cheddar cheese
  • ½ cup sour cream
  • 2 tablespoons milk
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ box garlic Texas toast
  • ½ cantaloupe seeded, sliced, and chilled

Instructions
 

  • Cook potatoes in the microwave on High 10
  • to 12 minutes until tender. Slice tops off
  • potatoes, scoop out potato pulp, and place into
  • a large bowl. Steam broccoli in a small amount
  • of water until crisp-tender, about 6 to 8 minutes.
  • Preheat oven to 400°F. Combine potato pulp,
  • steamed broccoli, ham, Cheddar cheese, sour
  • cream, milk, butter, salt, and pepper. Spoon
  • mixture into potato shells. Place on a foil-lined
  • baking sheet. Bake 30 minutes or until
  • thoroughly heated.
  • Bake toast according to package directions.
  • Serve sliced cantaloupe on the side.
