Mango Cowboy Caviar

One of my favorite summer appetizers or snacks! This cowboy caviar is so fresh and addicting. I like to eat it with my favorite Juanita’s corn chips.

Mango Cowboy Caviar

Ingredients
  

  • 1 can black beans
  • 1 can corn
  • 1 red pepper diced
  • 1 mango diced
  • ½ large onion diced
  • 2 chipotle peppers in adobo
  • 1 large lime
  • 1 teaspoon Kosher salt

Instructions
 

  • Drain and rinse beans and corn.
  • Pour into a medium bowl.
  • Add diced red pepper, mango and onion.
  • Slice chipotle peppers in half and remove all seeds. (Be careful, they’re spicy!)
  • Chop very finely and add to mixture.
  • With the help from the Chef, juice the lime over the mixture.
  • Add salt and stir to completely combine.
  • Serve with corn chips. Keep refrigerated.
