Mexican Style Stuffed Shells

Yum, yum and yum! My husband was so excited about these Mexican Style Stuffed Shells and I loved how easy it was to put together.

Another thing I love about this meal is it’s budget friendly. The ingredients may already be in your fridge or pantry and if not, they are really inexpensive to purchase.

Something else to consider.. This makes a good bit, so if you’re rocking a family of 2-4 there will be leftovers to freeze and eat later. This is a huge plus for me.

If I can save time and money, I’m in!

How to Make Mexican Style Stuffed Shells:

You will need:

  • 1 lb Lean Ground Beef
  • 1 can Fire Roasted Tomatoes (14.5 oz, Diced)
  • 1 packet Taco Seasoning
  • 2 cups Mexican Cheese Blend (Shredded)
  • 1/2 box of jumbo shells (about 25)
  • 1 jar Chi Chi’s Cilantro Salsa
  • Salt & Pepper

Instructions:

First off, get those jumbo shells cooking according to the package instructions. Once they’re tender, give them a quick rinse with cool water, and let them chill out for a bit.
In a skillet over medium heat, brown up that lean ground beef. Sprinkle a bit of salt and pepper for flavor. Once it’s nice and browned, drain off any excess grease.
Now, let’s kick it up a notch! Toss in those fire-roasted tomatoes and the taco seasoning. Mix it all together until everything is cozy and combined.
Time to add in some cheesy goodness! Throw in about 1 1/2 cups of that Mexican cheese blend and give it a good stir until it’s all melty and delicious.
While that’s simmering away, preheat your oven to 375°F (190°C).
Next up, grab those cooked shells and start stuffing them with your tasty mixture. Once they’re all snug in a greased 13×9 baking dish, sprinkle the remaining cheese on top.
Pop that dish in the oven, uncovered, and let it bake for about 25 minutes until everything is bubbly and golden brown.
Once it’s done, take it out and drizzle on some of that zesty Chi Chi’s Cilantro Salsa.

Mexican Style Stuffed Shells

Ingredients

  • 1 lb Lean Ground Beef
  • 1 can 14.5 Fire Roasted Tomatoes Diced
  • 1 packet Taco Seasoning
  • 2 cups Mexican Cheese Blend Shredded
  • 1/2 box of jumbo shells about 25
  • 1 jar Chi Chi's Cilantro Salsa
  • Salt & Pepper

Instructions

  • Cook Shells according to package directions.
  • Drain and rinse with cool water.
  • Set aside.
  • Heat a Non-Stick Skillet over Med heat.
  • Add ground beef and lightly season with salt and pepper.
  • Cook until brown, drain.
  • Add Fire Roasted Tomatoes and Taco Seasoning. Mix well.
  • Add 1 1/2 cup Cheese and mix well.
  • Preheat oven to 375 degrees.
  • Stuff each shell with your mixture and place in a greased 13x9 baking dish.
  • Top with remaining cheese and cook uncovered 25 minutes.
  • Remove from oven and top with Cilantro Salsa.
  • Enjoy!
