Cheesecake is one of my favorite things to bake, there are just so many varieties you can make.
So this is my first one that includes pumpkin. And since only pumpkin would be boring, I decided to go with a Oreo Pumpkin Butter Cheesecake! Have you tried the pumpkin butter from Trader Joe’s yet?! If not, you must! Soooo delicious
The taste is mind blowing. A perfect combo of pumpkin pie and cheesecake with the nice dark chocolaty taste from the crust!
You will see that I didn’t use lots of sugar in the batter – because of the pumpkin butter. The more pumpkin butter you use, the less sugar you need to add – the butter is very sweet! Now let’s have a look at the recipe and then let’s see what everyone else came up with.
Ingredients:
The Crust:
- 1½ cups Oreo cookies, crushed
- ¼ cup brown sugar
- ¼ cup butter melted
The Cake:
- 2 packages (16 oz.) cream cheese (I used 1 low fat and 1 fat free), softened
- ½ cup sugar
- 1 tablespoon all-purpose flour
- 2 eggs
- ½ cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- ¼ cup pumpkin butter
Directions:
Preheat your oven to 350 F
Line a 8 inch pie pan with parchment paper
In a large bowl combine crushed cookies, melted butter and sugar
Press dough into pie pan and bake for 10 minutes
In another large bowl combine all cake ingredients with a hand mixer until smooth
Pour into pre-baked crust and bake for additional 40 minutes (or until center is set)
Let cool on the counter for half an hour, then place in fridge for another 2 hours
