Making my own homemade canned Chicken Soup is something I love-making. We raise our own chickens and vegetables, knowing everything is fresh and healthy means so much to me. Don’t worry about having to buy some of the ingredients. You still have the advantage of no preservatives.
This is my go to meal when I need to make a meal for someone else in a hurry. Make some homemade noodles or cook some rice. Pour the canned chicken soup over the noodles ( rice) heat and you have a delicious meal. Add a loaf of homemade bread or rolls, your family will love you. Come along this isn’t hard to make.
Needed: Pressure canner, quart jars, rings and bands. 11 cups of chicken cooked, carrots, onions, celery cut into pieces. Chicken broth to fill jars.
Wash your jars. Boil bands and rings. Bring chicken broth to a boil and keep hot.
In clean jars layer
1 1/2 cups chicken,
1 cup of carrots,
1 cup of celery
and 1 cup of onions.
Pour hot chicken broth over vegetables to one inch of top.
Wipe down jar. Screw on lids and bands. Process in pressure canner at 10 pounds of pressure for 1 1/2 hours.
TIP: If you want to add different vegetables (peas) make sure they have not been pre-cooked. Peas and corn will get mushy. I prefer to add them when warming everything up. ENJOY!
