My husband goes crazy for banana bread! So I have to be really careful to not mess it up when trying a new twist on it or he would be so so disappointed!
I refuse putting lots of oil or butter in something that can get all his moistness and fluffy texture from the fruit it is made of anyway. So this Low Fat Banana Chocolate Chip Bread has absolutely no added fat! Bananas and coconut milk (or any other full fat milk) do the job just fine and the result is a super moist bread, that my husband loved 🙂 He didn’t even notice it was a healthier version!
He eats it with butter, so for him I do not put the glaze on, but I like to eat it as a cake, so for me there is a little more chocolate
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- â…“ cup coconut milk, canned
- â…“ cup brown sugar
- 1 tablespoon lemon juice
- 2 cups mashed ripe bananas (must be 2 cups after mashing)
- ½ to 1 cup chocolate chips (I used sugar free)
Directions:
Preheat your oven to 350 F
Line your loaf form with parchment paper
Combine flour, baking soda, baking powder, salt and sugar in a large bowl
Add coconut milk, lemon juice and mashed bananas
Mix until combined (do not overmix)
Fold in chocolate chips
Transfer batter into your loaf form
Bake for 40-45 minutes
Let cool completely in the loaf form!
